Ingredients
- 2 pounds boneless, skinless chicken thighs
- 4 medium sweet potatoes
- ¼ cup By Design Buffalo Sauce (recipe below)
- ¼ cup melted butter
- ¼ cup melted coconut oil
- Salt and pepper to taste
By Design Buffalo Sauce
- ¼ cup rice wine vinegar
- 1 tablespoon dehydrated garlic
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 teaspoons paprika
- 2 teaspoons chipotle chili powder
- 3 teaspoons melted butter, coconut oil or other melted fat of your choice
Steps
- Preheat the oven to 400°F.
- Cube the sweet potatoes and combine with melted coconut oil, salt and pepper.
- Line a baking sheet with aluminum foil, place the sweet potatoes on the sheet and bake for 30 minutes.
- Meanwhile, cube the chicken and place in a large mixing bowl.
- Melt ¼ cup butter in a saucepan over medium heat.
- Add By Design Buffalo Sauce and remove from the heat.
- Pour on top of chicken and combine.
- After 30 minutes, remove sweet potato from the oven and combine with chicken.
- Pour everything into a glass baking dish and bake again for 30 minutes, stirring half way through.
