EBD Recipe: Buffalo Chicken Bake

Cook Time: 60 minutes

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 4 medium sweet potatoes
  • ¼ cup By Design Buffalo Sauce (recipe below)
  • ¼ cup melted butter
  • ¼ cup melted coconut oil
  • Salt and pepper to taste

By Design Buffalo Sauce

  • ¼ cup rice wine vinegar
  • 1 tablespoon dehydrated garlic
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons paprika
  • 2 teaspoons chipotle chili powder
  • 3 teaspoons melted butter, coconut oil or other melted fat of your choice

Steps

  1. Preheat the oven to 400°F.
  2. Cube the sweet potatoes and combine with melted coconut oil, salt and pepper.
  3. Line a baking sheet with aluminum foil, place the sweet potatoes on the sheet and bake for 30 minutes.
  4. Meanwhile, cube the chicken and place in a large mixing bowl.
  5. Melt ¼ cup butter in a saucepan over medium heat.
  6. Add By Design Buffalo Sauce and remove from the heat.
  7. Pour on top of chicken and combine.
  8. After 30 minutes, remove sweet potato from the oven and combine with chicken.
  9. Pour everything into a glass baking dish and bake again for 30 minutes, stirring half way through.
