Chicken Parmesan Ingredients
- 8 chicken breasts, boneless/skinless
- 2 cups almond meal
- 0.5 cup Parmesan cheese (optional)
- 2.5 tablespoons Italian Seasoning
- 2 teaspoons sea salt
- 2 teaspoons pepper
- 3 eggs
Homemade Marinara Ingredients
- 2 cans whole organic tomatoes
- 2 red onions, chopped
- 1 tablespoon extra virgin olive oil
- 5 minced garlic cloves
- 1.5 tablespoons Italian Seasoning
- ¾ teaspoon sea salt
- ½ teaspoon pepper
- 1 cup red wine
- A handful of large fresh basil leaves
Chicken Parmesan Steps
- Preheat the oven to 375ºF. Line a baking sheet with parchment paper.
- Using a sharp knife, butterfly the chicken breasts (cut in half horizontally).
- Lay out 3 plates. On 1 plate beat the eggs together. On the second place mix the almond meal, cheese, seasoning, salt and pepper.
- Dip each piece of chicken into the egg wash and then the dry batter. Make sure to get both sides.
- Lay the battered chicken on baking sheets and bake for about 35 minutes (or until they look crispy).
- Let them cool for a few minutes before serving.
Homemade Marinara Steps
- Over medium low heat, warm the olive oil.
- Add the onion and cook until they are soft.
- Add the garlic and stir. Cook for 1 minute.
- Add the tomatoes and cook them until they break down a bit. Use a potato masher to help this process.
- Add the seasoning, salt and pepper and stir.
- Add the wine.
- Now let the marinara simmer until your chicken is cooked. The liquid will reduce a bit and the flavors will combine and intensify.
- Add fresh basil once cooked.
- Serve by ladling marinara over parmesan chicken.
