EBD Recipe: Maple Salmon and Tzatziki

Maple Salmon

Prep time: 5 minutes

Cook time: 20 minutes

Special equipment: none

Ingredients

  • 2 pounds salmon
  • 2 cloves garlic, minced
  • ¼ cup maple syrup
  • 2 tablespoons Dijon mustard
  • ¼ cup balsamic vinegar or wheat-free tamari
  • 1/8 teaspoon cayenne pepper
  • 2 teaspoons of a great fish & chicken seasoning
  • Sea salt and fresh ground black pepper

 Steps

  1. Place salmon in a dish with a lid.
  2. Mix together garlic, maple syrup, Dijon mustard, balsamic vinegar, cayenne pepper and your favorite seasoning in a small bowl.
  3. Drizzle mixture over salmon.
  4. Allow to marinade ½ hour or overnight.
  5. Grill or bake salmon at 425ºF for 18-25 minutes or until the internal temperature reaches 145ºF. Serve with Tzatziki.

Tzatziki

Prep time: 5 minutes

Cook time: none

Special equipment: none

Ingredients 

  • 1/2 of a medium cucumber, grated (with a cheese grater or food processor)
  • Juice of one lemon, about 3 tablespoons
  • 1 garlic clove, chopped
  • 1 tablespoon finely chopped fresh dill or 1 teaspoon dry (can substitute mint leaves for a slightly different version)
  • 3 cups full fat Greek Yogurt
  • Sea salt and fresh ground black pepper

Steps

  1. Prepare cucumber and place in a strainer with sea salt. This will help get the cucumber to release it's liquid.
  2. In a bowl combine lemon juice, garlic, dill, yogurt, salt and pepper.
  3. Squeeze water out of cucumber and add to bowl.
  4. Combine all ingredients.

*If you have some extra time, grate the cucumbers in advance and place them in a colander. Sprinkle them with 2 teaspoons or more of sea salt and toss. Leave them for about 30 minutes. This will help to eliminate some excess water.

Yields about 3.5 cups
