EBD Recipe: Tuna Boats

Eat By Design

Prep time: 15 minutes

Cook time: none

Special equipment: immersion/stick blender

Ingredients

  • 4 cans wild caught tuna, packed in water
  • 4 ribs of celery, diced
  • ½ red onion, diced
  • 1 cup carrots, peeled and shredded
  • ½ cup raw almonds, chopped
  • Romaine lettuce leaves
  • ½ cup By Design mayonnaise
  • Salt and pepper to taste

Steps

  1. Drain the water from the tuna and place in a large mixing bowl.
  2. Chop the celery, onion, carrot and almonds and add to the bowl.
  3. Prepare the By Design mayonnaise and pour on top of the ingredients.
  4. Season with salt and pepper and combine.
  5. Serve piled high on romaine lettuce leaves.
