Special equipment: slow cooker
Ingredients
- 1 tbsp. ghee
- 1 medium white onion, diced
- 2 cloves garlic, diced
- 15 oz. can of diced tomatoes
- 2 tbsp. paprika
- 1 tbsp. cumin
- Pinch of nutmeg
- 5 allspice berries
- 5 cloves
- Salt and pepper to taste
- 3 lb. pork shoulder
- Juice of 1 orange
- ¼ cup apple cider vinegar
Steps
- Over medium heat add the ghee to a pan.
- Once the ghee melts, add the onion and garlic.
- Cook for 5 minutes or until translucent, then add the tomatoes. Reduce heat to low.
- Add the orange juice and apple cider vinegar to the bottom of the slow cooker.
- Combine all the dried spices and mix with a little water, until it turns into a paste consistency.
- Combine the paste with the liquid in the bottom of the slow cooker.
- Season the pork generously with salt and pepper. Lay the pork shoulder on top of the liquid in the slow cooker.
- Top with the onion, garlic and tomato mixture.
- Cook on low for 8 hours.
- Once the pork is cooked, gently pull apart the pork using 2 forks and combine with liquid.
