Ingredients
- 3-5 lbs. pork shoulder roast
- 1 tablespoon chili powder
- 2 teaspoons curry
- Lots of freshly grated pepper
- 3 cups homemade chicken or beef bone broth
- 2 onions, quartered
- Homemade By Design BBQ sauce
Steps
- Remove the string from the roast.
- Place the roast in your slow cooker, fat side up, and surround with onions.
- Add the chili powder, curry and pepper.
- Pour in the broth.
- Cover the pork roast and turn your slow cooker on low for 15 hours.
- Once it is cooked, pour most of the remaining liquid into a bowl. Leave a few cups of liquid in with the roast. (Refrigerate the liquid you poured out. This is just to let the fat congeal so you don't throw it down the sink. Discard it once it's cold.)
- Using two forks, pull the entire pork roast apart. It will be very stringy. Remove large globs of fat.
- Add the By Design BBQ sauce directly on top of the pork roast in your slow cooker and stir to combine.
- Cover and continue cooking on low for another hour or serve immediately.
Yields 8 servings.
To take this dish one step further, add some chopped or grated apples sprinkled with cinnamon or serve with sauerkraut or coleslaw.
