Ingredients
- 2 pounds chicken breasts or thighs
Marinade Ingredients
- ½ cup chicken broth
- ¼ cup maple syrup
- 1 teaspoon dried thyme (or 2 teaspoons fresh)
- 2 garlic cloves, minced
- 1 tablespoon apple cider vinegar
- 2 tablespoons stone ground or Dijon mustard
- ½ teaspoon pepper
- ¼ teaspoon salt
Steps
- Preheat oven to 400ºF.
- Using an 8x8 glass dish, add all marinade ingredients. Using a whisk, mix well.
- Add chicken to marinade and spoon marinade over top.
- Bake thighs for approximately 35 minutes or until internal temperature reaches 165ºF. For breasts, bake for about 25 minutes or until internal temperature reaches 155ºF.
- Remove chicken from oven.
- Pour remaining marinade from dish into a small pan over medium-high heat. Bring to a boil.
- Allow to boil until the liquid reduces by about half the volume (or to a thickness that you like).
- Place chicken on a plate and spoon sauce over top.
- Serve with mashed potatoes and green beans.
