EBD Recipe: Maple Mustard Glazed Chicken

Eat By Design

Prep Time: 5 minutes

Cook Time: 25-40 minutes

Ingredients

  • 2 pounds chicken breasts or thighs

Marinade Ingredients

  • ½ cup chicken broth
  • ¼ cup maple syrup
  • 1 teaspoon dried thyme (or 2 teaspoons fresh)
  • 2 garlic cloves, minced
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons stone ground or Dijon mustard
  • ½ teaspoon pepper
  • ¼ teaspoon salt

Steps

  1. Preheat oven to 400ºF.
  2. Using an 8x8 glass dish, add all marinade ingredients. Using a whisk, mix well.
  3. Add chicken to marinade and spoon marinade over top.
  4. Bake thighs for approximately 35 minutes or until internal temperature reaches 165ºF. For breasts, bake for about 25 minutes or until internal temperature reaches 155ºF.
  5. Remove chicken from oven.
  6. Pour remaining marinade from dish into a small pan over medium-high heat. Bring to a boil.
  7. Allow to boil until the liquid reduces by about half the volume (or to a thickness that you like).
  8. Place chicken on a plate and spoon sauce over top.
  9. Serve with mashed potatoes and green beans.
