Two Ingredient Portable Pancakes

Do you ever get up in the morning, open the fridge as your little one is attached to your leg and won’t let go, and think to yourself “what am I going to make for breakfast today?”…..

And to top it off you have an appointment in an hour and need to be out the door quickly, so making the breakfast portable and mess free is a must. 

Well I’m here to help.

This recipe was born from one of those mornings, and it’s just so delicious and easy I HAD to share. With just TWO ingredients, the result is a gluten free, sugar free, chemical free, fluffy and guilt free pancake.

Perfect for adults and babies alike, this is a great food option for parents who are practicing baby led weaning (more on that topic later).

Two Ingredient Banana Pancakes

  • 1 large banana
  • 2 eggs
  • Oil to grease the pan. (I like coconut oil or grass fed butter)

How To: 

  1. Pick the most ripe banana and mash it up until its gooey.
  2. Whisk eggs and combine with the mashed banana.
  3. Pour into a hot greased pan and cook on a low to medium heat until one side bubbles.
  4. Flip and cook the other side for 30 seconds or until golden brown.
  5. Serve with berries, cinnamon, maple syrup, coconut butter or whatever floats your boat!
