EBD Recipe: BBQ Beef Meatloaf

Prep time: 15 minutes

Cook time: 60 minutes

Special equipment: none

Ingredients

  • 1 tablespoons butter or ghee
  • 1 carrot, peeled and diced
  • 10 brussels sprouts, shaved
  • 10 cremini mushrooms, diced
  • 1 small white onion
  • 2 pounds ground beef
  • 1 egg
  • ¼ cup By Design Barbecue Sauce
  • ¼ cup By Design Ketchup
  • Salt and pepper to taste

Steps

  1. Preheat the oven to 350ºF.
  2. In a pan oven medium heat add the butter or ghee. Once the oil melts add the carrots, brussels sprouts, mushrooms and onion.
  3. Cook covered for 6-8 minutes.
  4. In a large mixing bowl, combine the ground beef, egg, barbecue sauce, ketchup and salt and pepper with clean hands.
  5. Add the cooked vegetables on top of the beef mixture. Allow the vegetables to cool before mixing with clean hands.
  6. Place the meat in a baking dish and form into a loaf. It should hold "loaf form" on it's own.
  7. Bake for 45 minutes.
  8. Spread additional barbecue sauce or ketchup over the meatloaf and cook for an additional 15 minutes.
