Ingredients
- 1 tablespoons butter or ghee
- 1 carrot, peeled and diced
- 10 brussels sprouts, shaved
- 10 cremini mushrooms, diced
- 1 small white onion
- 2 pounds ground beef
- 1 egg
- ¼ cup By Design Barbecue Sauce
- ¼ cup By Design Ketchup
- Salt and pepper to taste
Steps
- Preheat the oven to 350ºF.
- In a pan oven medium heat add the butter or ghee. Once the oil melts add the carrots, brussels sprouts, mushrooms and onion.
- Cook covered for 6-8 minutes.
- In a large mixing bowl, combine the ground beef, egg, barbecue sauce, ketchup and salt and pepper with clean hands.
- Add the cooked vegetables on top of the beef mixture. Allow the vegetables to cool before mixing with clean hands.
- Place the meat in a baking dish and form into a loaf. It should hold "loaf form" on it's own.
- Bake for 45 minutes.
- Spread additional barbecue sauce or ketchup over the meatloaf and cook for an additional 15 minutes.
