EBD Recipe: Sesame Chicken and Mango Salsa

Eat By Design

Prep Time: 20 minutes

Marinade Time: 30 minutes-overnight

Cook Time: 25-30 minutes

Ingredients

  • 2 pounds chicken thighs
  • ¼ cup wheat free tamari
  • 2 tablespoons Dijon mustard
  • ¼ cup honey
  • ¼ cup sesame seeds

Steps 

  1. Place chicken in a baking dish.
  2. Mix marinade ingredients together.
  3. Pour over chicken.
  4. Stir chicken to coat.
  5. Cover and refrigerate for 30 minutes or overnight.
  6. Bake chicken at 375ºF for 30 minutes or until an instant read thermometer registers at 180ºF. Alternatively, you can grill the chicken for 25 minutes or until cooked through.
  7. Serve with Mango Salsa.

Mango Salsa

Prep time: 10 minutes

Cook time: none

Quick prep idea: buy frozen, chopped mango and chop it finely while still frozen.

Ingredients

  • 2 mangoes, approximately 2 cups, peeled and diced
  • ½ of a medium red onion, approx ¾ cups, diced
  • 1 red pepper, approximately 1 cup, diced
  • ¼ cup cilantro, finely chopped
  • Juice from 2 limes, approximately 4 tablespoons
  • ¼ tsp sea salt

Steps

  1. Combine all ingredients in a medium bowl and let sit in the refrigerator for at least 30 minutes before enjoying.
