Marinade Time: 30 minutes-overnight
Cook Time: 25-30 minutes
Ingredients
- 2 pounds chicken thighs
- ¼ cup wheat free tamari
- 2 tablespoons Dijon mustard
- ¼ cup honey
- ¼ cup sesame seeds
Steps
- Place chicken in a baking dish.
- Mix marinade ingredients together.
- Pour over chicken.
- Stir chicken to coat.
- Cover and refrigerate for 30 minutes or overnight.
- Bake chicken at 375ºF for 30 minutes or until an instant read thermometer registers at 180ºF. Alternatively, you can grill the chicken for 25 minutes or until cooked through.
- Serve with Mango Salsa.

Mango Salsa
Prep time: 10 minutes
Cook time: none
Quick prep idea: buy frozen, chopped mango and chop it finely while still frozen.
Ingredients
- 2 mangoes, approximately 2 cups, peeled and diced
- ½ of a medium red onion, approx ¾ cups, diced
- 1 red pepper, approximately 1 cup, diced
- ¼ cup cilantro, finely chopped
- Juice from 2 limes, approximately 4 tablespoons
- ¼ tsp sea salt
Steps
- Combine all ingredients in a medium bowl and let sit in the refrigerator for at least 30 minutes before enjoying.
