EBD Recipe: Pulled Pork Tacos

Prep time: 15 minutes

Cook time: 15 minutes

Special equipment: food processor

Ingredients

 Steps

  1. Preheat oven to 350°F.
  2. Combine the plantains, egg whites, coconut oil and salt and pepper in a food processor and blend for 1-2 minutes or until the mixture turns a smooth consistency.
  3. Cover 3 baking sheets with parchment paper and drizzle melted coconut oil on each of the surfaces.
  4. Pour the plantain mixture into 12 even balls onto the 3 baking sheets (4 on each sheet).
  5. Flatten the mixture with a spoon, moving it in a circular motion.
  6. Bake the wraps for 15 minutes.
  7. Remove from the oven and let cool on a wooden cutting board.
  8. Top with pulled pork, homemade guacamole and any of your other favourite toppings.
