Ingredients
- 3 large plantains
- 2 egg whites
- 4 tablespoons coconut oil, melted
- Salt and pepper to taste
- By Design Pulled Pork
- Homemade guacamole
Steps
- Preheat oven to 350°F.
- Combine the plantains, egg whites, coconut oil and salt and pepper in a food processor and blend for 1-2 minutes or until the mixture turns a smooth consistency.
- Cover 3 baking sheets with parchment paper and drizzle melted coconut oil on each of the surfaces.
- Pour the plantain mixture into 12 even balls onto the 3 baking sheets (4 on each sheet).
- Flatten the mixture with a spoon, moving it in a circular motion.
- Bake the wraps for 15 minutes.
- Remove from the oven and let cool on a wooden cutting board.
- Top with pulled pork, homemade guacamole and any of your other favourite toppings.
