EBD Recipe: Mexican Pulled Pork

Prep time: 15 minutes

Cook time: 8 hours

Special equipment: slow cooker

Ingredients

  • 1 tbsp. ghee
  • 1 medium white onion, diced
  • 2 cloves garlic, diced
  • 15 oz. can of diced tomatoes
  • 2 tbsp. paprika
  • 1 tbsp. cumin
  • Pinch of nutmeg
  • 5 allspice berries
  • 5 cloves
  • Salt and pepper to taste
  • 3 lb. pork shoulder
  • Juice of 1 orange
  • ¼ cup apple cider vinegar

Steps

  1. Over medium heat add the ghee to a pan.
  2. Once the ghee melts, add the onion and garlic.
  3. Cook for 5 minutes or until translucent, then add the tomatoes. Reduce heat to low.
  4. Add the orange juice and apple cider vinegar to the bottom of the slow cooker.
  5. Combine all the dried spices and mix with a little water, until it turns into a paste consistency.
  6. Combine the paste with the liquid in the bottom of the slow cooker.
  7. Season the pork generously with salt and pepper. Lay the pork shoulder on top of the liquid in the slow cooker.
  8. Top with the onion, garlic and tomato mixture.
  9. Cook on low for 8 hours.
  10. Once the pork is cooked, gently pull apart the pork using 2 forks and combine with liquid.
