
Maple Salmon

Ingredients
- 2 pounds salmon
- 2 cloves garlic, minced
- ¼ cup maple syrup
- 2 tablespoons Dijon mustard
- ¼ cup balsamic vinegar or wheat-free tamari
- 1/8 teaspoon cayenne pepper
- 2 teaspoons of a great fish & chicken seasoning
- Sea salt and fresh ground black pepper
Steps
- Place salmon in a dish with a lid.
- Mix together garlic, maple syrup, Dijon mustard, balsamic vinegar, cayenne pepper and your favorite seasoning in a small bowl.
- Drizzle mixture over salmon.
- Allow to marinade ½ hour or overnight.
- Grill or bake salmon at 425ºF for 18-25 minutes or until the internal temperature reaches 145ºF. Serve with Tzatziki.

Tzatziki

Ingredients
- 1/2 of a medium cucumber, grated (with a cheese grater or food processor)
- Juice of one lemon, about 3 tablespoons
- 1 garlic clove, chopped
- 1 tablespoon finely chopped fresh dill or 1 teaspoon dry (can substitute mint leaves for a slightly different version)
- 3 cups full fat Greek Yogurt
- Sea salt and fresh ground black pepper
Steps
- Prepare cucumber and place in a strainer with sea salt. This will help get the cucumber to release it's liquid.
- In a bowl combine lemon juice, garlic, dill, yogurt, salt and pepper.
- Squeeze water out of cucumber and add to bowl.
- Combine all ingredients.
*If you have some extra time, grate the cucumbers in advance and place them in a colander. Sprinkle them with 2 teaspoons or more of sea salt and toss. Leave them for about 30 minutes. This will help to eliminate some excess water.
