EBD Recipe: By Design Breakfast Casserole

Eat By Design

Prep time: 10 minutes

Cook time: 60 minutes

Ingredients

  • 2 large sweet potatoes, diced
  • 1 medium white onion, diced
  • 1 small bag of spinach
  • 8 small breakfast sausages (grain free)
  • 12 eggs
  • ¼ cup coconut milk
  • Salt and pepper to taste

Steps

  1. Preheat the oven to 350ºF.
  2. Dice the sweet potatoes and add to the bottom of a baking dish.
  3. Dice the white onion and add to the bottom of the dish.
  4. Using kitchen scissors cut the breakfast sausages into small pieces.
  5. Rip the spinach apart and place on top of the remaining ingredients in the dish.
  6. In a separate mixing bowl combine all of the eggs, coconut milk and salt and pepper.
  7. Pour the egg mixture into the pan.
  8. Bake for 60 minutes.
