Ingredients
- 2 large sweet potatoes, diced
- 1 medium white onion, diced
- 1 small bag of spinach
- 8 small breakfast sausages (grain free)
- 12 eggs
- ¼ cup coconut milk
- Salt and pepper to taste
Steps
- Preheat the oven to 350ºF.
- Dice the sweet potatoes and add to the bottom of a baking dish.
- Dice the white onion and add to the bottom of the dish.
- Using kitchen scissors cut the breakfast sausages into small pieces.
- Rip the spinach apart and place on top of the remaining ingredients in the dish.
- In a separate mixing bowl combine all of the eggs, coconut milk and salt and pepper.
- Pour the egg mixture into the pan.
- Bake for 60 minutes.
