Prep time: 5 minutes

Cook Time: 10 minutes

Ingredients

  • 30 brussels sprouts
  • 1 tablespoon butter
  • 1 teaspoon organic orange zest
  • 1 teaspoon organic lime zest
  • Juice from ½ of a medium sized orange

Option 1

  1. Bring water to a boil in steamer pot and steam vegetables until tender.
  2. Meanwhile, combine softened butter and remaining ingredients in a small bowl. Use immediately or place in an airtight container in the fridge.
  3. Add about 1 tablespoon of butter to warm vegetables and toss to coat.

Option 2

  1. Wrap butter in wax paper and place in the fridge for 40 minutes. Then shape it into a log and slice into ½ in slices.

Option 3

  1. Increase quantities of butter to yield a larger batch.
  2. Wrap it in wax paper and place in the fridge for 40 minutes.
  3. With a rolling pin, roll it flat between 2 sheets of wax paper.
  4. Use small cookie cutters to cut the butter into special shapes.

*Citrus butter is also excellent on steamed carrots.

Yields 4 servings.
