Ingredients
- 30 brussels sprouts
- 1 tablespoon butter
- 1 teaspoon organic orange zest
- 1 teaspoon organic lime zest
- Juice from ½ of a medium sized orange
Option 1
- Bring water to a boil in steamer pot and steam vegetables until tender.
- Meanwhile, combine softened butter and remaining ingredients in a small bowl. Use immediately or place in an airtight container in the fridge.
- Add about 1 tablespoon of butter to warm vegetables and toss to coat.
Option 2
- Wrap butter in wax paper and place in the fridge for 40 minutes. Then shape it into a log and slice into ½ in slices.
Option 3
- Increase quantities of butter to yield a larger batch.
- Wrap it in wax paper and place in the fridge for 40 minutes.
- With a rolling pin, roll it flat between 2 sheets of wax paper.
- Use small cookie cutters to cut the butter into special shapes.
*Citrus butter is also excellent on steamed carrots.
