Spooky Gummies

Prep time: 5 minutes

Cook time: none

Ingredients

  • 3 tablespoons gelatin
  • 1/3 cup lemon juice
  • 3 tablespoons unpasteurized honey

Steps

  1. Pour the gelatin and lemon juice into a small saucepan over medium heat.
  2. Gently stir until the gelatin has dissolved.
  3. Remove from the heat and stir in honey.
  4. Pour into a silicon candy mold in the shape of something spooky (bat, vampire fangs, pumpkin) and place in the freezer for 15 minutes until solid.
  5. Remove gummies from the mold and enjoy.

 

Banana Ghosts

Prep time: 5 minutes

Cook time: none

Ingredients

  • 4 bananas
  • ½ cup shredded, unsweetened coconut
  • 24 dark chocolate chips

Steps

  1. Peel the bananas and cut in half, lengthwise so they’re able to stand up.
  2. Roll the bananas in the coconut.
  3. Place the chocolate chips in the bananas as eyes and a ghost mouth.

 

Stuffed Pumpkins

Prep time: 5 minutes

Cook time: 15 minutes

Ingredients

  • 2 pounds ground beef or leftover beef chili
  • 6 orange peppers, top, seeds and pith removed
  • 6 eggs
  • 1 tablespoon coconut oil

Steps

  1. Preheat your oven to 375F.
  2. Remove the tops of the red peppers as well as the seeds and pith.
  3. “Carve” a jack o lantern eyes, mouth and nose in the pepper.
  4. Stuff with cooked ground beef or chili.
  5. Place the stuffed pepper sin a glass baking dish and cook for 15 minutes.
  6. Meanwhile, heat 1 tablespoon of coconut oil in a frying pan over medium heat.
  7. Fry the eggs to your liking.
  8. Once the stuffed orange peppers are finished baking, top each with a fried egg.
